Raspberry Chia Breakfast Pots

Chia pots seem to have become a great instagram trend. So I thought I'd join on the bandwagon and create some of my own. I've made sure to use British raspberries, to reduce the food miles on this recipe, as well as supporting my local producers! I am so lucky to live in London and especially close to the famous Borough Market. The range of fruit and vegetables there is so amazing and the quality is great! Although it can be so much easier to pop down to the supermarket, it can be great to make the effort to support these smaller businesses that sell their own fruit, veg or dairy! It's so lovely to create a relationship with the suppliers as well as reducing food miles and celebrating British produce! If you look on the packaging of ingredients in supermarket, it's incredible to see that they are from all over the world, but actually going to smaller suppliers, you can even find out where exactly it's made! I even found a company creating honey just down the road from me.. how amazing is that?



Now back to the chia pots, I've never really ventured into breakfast items, but seeing these on instagram, they looked so delicious, I had to give them a try! Surprisingly, they are incredibly easy to make and require not many ingredients, plus they are so diverse, you can change the flavours multiple times and let your creativity fly! I've added my famous granola recipe to this as it pairs so well with the chia pudding. My family and friends love my granola, so here is a gift to you! A homemade granola is so worth the extra effort, I've added lots of seeds and pistachios, as well as cranberries, sultanas and goji berries. Such a treat!!



Makes 2 large pots (to share for 4 people) or 4 small pots


Ingredients:

For the Pudding:

180g Hazelnut milk

180g Oat milk

6 tbsp. Chia Seeds

1 tsp. Vanilla extract

1 tbsp. Honey or Maple syrup

For the Granola:

300g Jumbo Oats

2 tbsp. Coconut oil

100g Maple syrup

60g Honey

2 tsp. Salt

300g Mixed seeds and nuts of your choice ( I used pistachios, pumpkin seeds, pine nuts and sunflower seeds)

200g Dried fruit of your choice (I used sultanas, goji berries and cranberries)

For the assembly:

Raspberries and Blueberries

Raspberry jam or compote

Greek yoghurt


Method:

1. Firstly, make the chia pudding. Mix in a small bowl all the ingredients for the pudding. Leave to thicken for a couple hours or ideally overnight. (TIP: You can choose the milks if you don't like hazelnut or oat milk)

2. Now for the granola. Preheat the oven to 180 degrees. In a pan, melt the coconut oil, honey and maple syrup until all combined. Pour into a bowl and mix with the oats and salt. Pour the mixture onto a baking tray, and pop in the oven for 10 minutes.

3. After 10 minutes, it should be browning around the edges, stir the oats and add the seeds and nuts, then cook for a further 10 minutes.

4. The granola is done once it starts to look golden brown all over. Now it's the time to stir in the fruit.

5. Leave to cool completely and then it's ready to use!

6. Now it's the assembly! In jars or bowls, place the chia pudding layering with fresh berries, granola and a raspberry compote (for the compote, just smash some berries, and add a little sugar to it). Be creative! Let your imagination flow!
