Roasted Plum and Vanilla Honey Almond Crumble
This time of year is the perfect time to have a deliciously warm and comforting pudding, and in my opinion, a crumble is the ultimate autumnal treat! This recipe uses British plums which are perfectly in season and complement The London Honey Co. Vanilla honey so well! The wonderful notes of Vanilla are so prominent in this recipe, and add such a delightful sweetness to the pudding. I recommend serving this dessert with a good quality vanilla ice cream or warming custard.
I've been working with The London Honey Company creating recipes for them and this recipe in particular I've used a vanilla honey. Tips to getting the perfect crumble:
Make sure the butter is nice and cold when you add it to the crumble mixture, this will ensure it stays crumbly and doesn't form into one large lump.
If you have a few small lumps of crumble, that's great! It will add some texture to the crumble and will give you a soft texture to parts of the pudding.
You can make the crumble topping in advance, you can also freeze it! This means you can have a freshly baked crumble whenever you fancy.
Don't chop up the fruit too small, if you do the fruit will break down too quickly and will be too mushy. You still want a slight bite to the fruit, it will make sure some acidity is still there and won't be too sweet.
You will need a small to medium size dish
2 tbsp. The London Honey Company Vanilla Honey
190g Plain Flour
80g Ground Almonds
170g Demerara Sugar
200g Cold, Unsalted Butter
2 tsp. Cinnamon
1 tsp. Salt
40g Flaked Almonds
1 tsp. The London Honey Company Vanilla Honey
Preheat the oven to 190 degrees celsius (fan oven). Slice the plums in half, removing the stone, then slice the halves in half again. You need to make sure the plum pieces aren’t too small, otherwise it will become all mushy!
Place all the plums into your dish, add the honey to the plums and mix all together. Now place this into the preheated oven and roast the plums for 20 minutes.
Whilst the plums are in the oven, now it’s time to make the crumble. In a medium mixing bowl, add the flour, ground almonds, demerara sugar, oats, cinnamon and salt. Mix together until all well combined. Cut the butter into small cubes and add to the flour mixture. Using your fingers to rub the flour and butter together. It will be done once it starts to resemble bread crumbs, you will also see some clumps forming which will give you lovely chunks of crumble throughout the pudding.
Add the flaked almonds into the crumble mixture.
At this point the plums should be ready, they will have softened and taken on the flavour of the honey. Now sprinkle the crumble mixture on top of the plums making sure it is evenly distributed across the dish. Drizzle the remaining 1 tsp. Vanilla Honey.
Return back to the oven and bake for 30 minutes until the crumble is golden brown and the plums are bubbling.
Take out from the oven and leave to cool for 5 minutes before serving. Serve with Vanilla Ice cream, Custard, Creme Fraiche or Cream! Whichever takes your fancy!
